Carpaccio of Raw Zucchini


It has been a long while since M and I really cooked. In fact, I don't even recall the last time we were in the kitchen preparing a meal together. However, over this past weekend, we decided to pull together a recipe from Deb's Blog (a la Tyler Florence): Carpaccio of Raw Zucchini. While my food-photo-capturing skills still needs a little work, my picture (above) at least gives you an idea of what my dish turned out like. This is actually a picture of my second time (over the same weekend) preparing this dish. The first time, we were a little heavy on the herbs (specifically flat-leaf parsley) and (deemed by M) a little light on the cheese. So, the second time around, we loaded up on the ricotta, as is evident. Find official recipe here.

Notes: In terms of herbs, we used: Thai basil (super strong, when compared with sweet, Italian basil), mint, flat-leaf parsley, leek, dill. Yumm-o! It was delicious! We enjoyed it with some crusty french bread and warm tomato/basil bisque. Super yummy.
